This morning I made "Spooky Halloween Cupcakes" roughly following the example below-listed
 in this blog (title: Spooky Cupcakes). This project is super fun and will be taking them to the annual Halloween bash at my brother's house.  To decorate push peanut shaped peanut better cookies approx.  1/3 or so into each cupcake and frost cupcake and cookie (covering cookie).  To make eyes and mouth use black decorating gel or if you want to get really creative substitute gel with chocolate chips. I made ghosts with round mouths harkening back to memories of  SNL's Mr. Bill; lol

A friend of mine sent me a wonderful piece called “Catching the Wild Pig”. For those of you who have never heard this parable (and I hadn’t until now), here it is:

A chemistry professor at a large college had some exchange students in the class. One day while the class was in the lab the Professor noticed one young man (exchange student) who kept rubbing his back, and stretching as if his back hurt. The professor asked the young man what was the matter. The student told him he had a bullet lodged in his back. He had been shot while fighting communists in his native country who were trying to overthrow his country's government and install a new communist government.

In the midst of his story he looked at the professor and asked a strange question. He asked, 'Do you know how to catch wild pigs?' The professor thought it was a joke and asked for the punch line. The young man said this was no joke. 'You catch wild pigs by finding a suitable place in the woods and putting corn on the ground. The pigs find it and begin to come every day to eat the free corn. When they are used to coming every day, you put a fence down one side of the place where they are used to coming. When they get used to the fence, they begin to eat the corn again and you put up another side of the fence. They get used to that and start to eat again.

You continue until you have all four sides of the fence up with a gate in the last side. The pigs, who are used to the free corn, start to come through the gate to eat; you slam the gate on them and catch the whole herd. Suddenly the wild pigs have lost their freedom. They run around and around inside the fence, but they are caught.

Soon they go back to eating the free corn. They are so used to it that they have forgotten how to forage in the woods for themselves, so they accept their captivity.

The young man then told the professor that is exactly what he sees happening to America. The government keeps pushing us toward socialism and keeps spreading the free corn out in the form of programs such as supplemental income, tax credit for unearned income, tobacco subsidies, dairy subsidies, payments not to plant crops (CRP), welfare, medicine, drugs, etc. While we continually lose our freedoms -- just a little at a time.

I found this an extremely fascinating and interesting parable and one I can totally endorse. For we must guard carefully not to fall into the trap of being so dependent on the government that we lose our sense of responsibility for our live and even worse, the very spark of life.

Yet, this also brings me to the recognition that we are caught in a rather interesting dilemma are we not. While I agree with the “trap” of the wild pig and the problems that presents, we are also experiencing what happens when you let the pigs (pun intended) run wild (the effect of too much de-regulation for example) and the effects it has on our society overall. – Anyone enjoying the financial crisis we are in? So the real question, (and I believe the true answer) lies in how do we find the right balance.

The trouble we have in our political system is we keep running back and forth between taming the wild pigs and letting them run wild. Wildness is good for creativity, entrepreneurialism, and the like. You want the free flow of energy to stimulate new innovation. And yet when you have unbounded flow of energy you have chaos, which then has to correct itself. As we learn to work with the powerful flow of societal energies, I believe we can learn to modulate the unbounded flow of energy while not reaching the point of constraining it to where we are limiting its flow.

When are we ever going to get a leader that understands the need for balance and stop with the rhetoric of polar opposite making one side wrong and the other right (and I don’t care which side we are talking about). Is it not time for us to have true leadership in this country, and in our companies. Leadership that can connect deeply with the soul of the entity (be it our country or our companies) and guide the energy that flows from there in a balanced way so that we are contributing effectively to our society and our planet?

Well now the market crapped out, & even though it has come back somewhat, the government and the average Joes are still looking for a scapegoat. God knows there has to be one for everything. Well, here we are.
Go ahead and continue to take us down, but you’re only going to hurt yourselves. What’s going to happen when we can’t find jobs on the Street anymore? Guess what: We’re going to take yours. We get up at 5am & work till 10pm or later. We’re used to not getting up to pee when we have a position. We don’t take an hour or more for a lunch break. We don’t demand a union. We don’t retire at 50 with a pension. We eat what we kill, and when the only thing left to eat is on your dinner plates, we’ll eat that.
For years teachers and other unionized labor have had us fooled. We were too busy working to notice. Do you really think that we are incapable of teaching 3rd graders and doing landscaping? We’re going to take your cushy jobs with tenure and 4 months off a year and whine just like you that we are so-o-o-o underpaid for building the youth of America. Say goodbye to your overtime and double time and a half. I’ll be hitting grounders to the high school baseball team for $5k extra a summer, thank you very much.
So now that we’re going to be making $85k a year without upside, Joe Mainstreet is going to have his revenge, right? Wrong! Guess what: we’re going to stop buying the new 80k car, we aren’t going to leave the 35 percent tip at our business dinners anymore. No more free rides on our backs. We’re going to landscape our own back yards, wash our cars with a garden hose in our driveways. Our money was your money. You spent it. When our money dries up, so does yours.
The difference is, you lived off of it, we rejoiced in it. The Obama administration and the Democratic National Committee might get their way and knock us off the top of the pyramid, but it’s really going to hurt like hell for them when our fat a**es land directly on the middle class of America and knock them to the bottom.
We aren’t dinosaurs. We are smarter and more vicious than that, and we are going to survive. The question is, now that Obama & his administration are making Joe Mainstreet our food supply…will he? and will they?”

Homemade Vanilla Extract







Assemble:

2 bottles Vodka  (I am using Smirnoff vodka) 30% proof or less, cost = $28.51

Vanilla Beans   1/2 LB Gourmet A Madagascar Bourbon Vanilla Beans 6-7"  )  Extract grade or better vanilla beans  (I purchased gourmet....see link above) Cost = $26.99 plus shipping
*** Note 1/4 LB. would have been sufficient, reseal for later use (think vanilla sugar)

Instructions:

6 Vanilla Beans for every two cups Vodka;  poured  approximately 3/4 from each bottle (and poured into sterile Mason jar) to make room for vanilla beans. Cut  vanilla beans long way leaving approximately an inch and insert into bottles, so that vanilla beans remains intact. Open to expose caviar. At minimum, allow two months for extract to develop in a cool dark place, over time, the richer the color the stronger the extract. Shake vigorously day 1 and then give it a little shake every 1-3 days. 

After a couple of months extract should have rich beautiful color and be ready to use, however, if time allows mixture may sit a few more weeks ~ ~ months.  At this time you may strain it into small bottles for gifts.  You may put a vanilla bean in each bottle so that the extract will keep gaining in flavor and you may top off your extract periodically w/vodka to replenish.

Spooky Cupcakes






Cupcakes
1 (18.25-ounce) box Devil's food cake mix
1 1/4 cups buttermilk*
1/2 cup Land O Lakes® Butter melted
3 Land O Lakes® All-Natural Eggs
2 tablespoons unsweetened cocoa
2 teaspoons vanilla
Frosting
4 cups powdered sugar
1/3 cup Land O Lakes® Butter, softened
1 (8-ounce) package cream cheese, softened
1 teaspoon vanilla
Decorations
24 peanut-shaped peanut butter sandwich cookies
Black decorator gel or icing

Heat oven to 350°F. Place paper baking cups into 24 muffin pan cups; set aside.

Combine all cupcake ingredients in large bowl. Beat at low speed until blended. Increase speed to medium; beat until batter is thick and well combined.

Spoon batter evenly into prepared muffin pan cups. Bake for 17 to 20 minutes or until toothpick inserted in center comes out clean. Let cool in pan 5 minutes. Remove to wire cooling rack; cool completely.

Combine all frosting ingredients in medium bowl. Beat at medium speed until creamy.

Working with 1 cupcake and 1 cookie at a time. Push end of cookie 1/3 of way into each cupcake; frost cupcake. Spread frosting in front of and up onto cookie to give ghost a smooth look. Add eyes and mouth to cookie using black gel or icing.


*Substitute 5 teaspoons vinegar or lemon juice and enough milk to equal 1 1/4 cups; let stand 5 minutes.

Vanilla Sugar Recipe, Gift





After scraping seeds from vanilla bean, add empty vanilla bean pod to 2 cups sugar. Cover; store at room temperature in container with tight-fitting lid. Vanilla sugar made with vanilla extract or vanilla bean can be used for baking or sprinkled on fresh fruit, yogurt or in tea.

Recipe Tip
Vanilla sugar can be stored after drying in a container with a tight-fitting lid.

Second Method For Vanilla Sugar Gift from My Own Labels

"In an airtight container, combine  sugar (aka “sugar in the raw”) with one or two whole vanilla beans. A good rule to follow here is that you should use one vanilla bean per every two cups of sugar, so if you have a larger jar, adjust your vanilla bean count accordingly.
Let the jar sit for two to three weeks, lightly shaking the contents every couple of days or so. When ready, the sugar will be infused with the essence of vanilla. The vanilla beans can then be removed and reused for other purposes because they will have remained whole and undamaged in the container. She uses this particular type of vanilla sugar in coffee, or to sprinkled over pies and cookies. The sugar crystals are large and defined, so  it works best as a topping, and it gives a nice flavor boost as rimming on cocktail glasses as well."

Today I'm putting together some gift ideas for Christmas, Birthday, Shower, Favors, and Hostess Gifts.  Today I'm putting together (New) retro recipe cards card gifts.

Materials:

Retro Recipe Cards  (Purchased @ Michaels)
Scissors
Two Balls Yarn (Your Choice of Color) (I buy the "pound" balls and this time purchased the white yarn on clearance because apparently someone unwrapped it or damaged it in some way)





I alternate pink and white yarn because it is cute and girly like these retro cards.  Simply cut the yarn into strips for bows and wrap yarn around a group of two or three cards and that is it, you are finished and can pull them out when you are ready to use them.  Super Cute in a baking gift basket as well. There will be tons of yarn left for dozens of projects.

Homemade Baked Pasta: Frugal Recipe

I found this recipe on Southern Savers Website, Frugal Recipe of The Week, submitted by Lea, her blog is Thou Shalt Not Pay Retail

  • Ground beef,
  • Shredded Mozzerella or Italian Blend Cheese - 2c
  • 1/2 Box Pasta - I prefer Penne, Ziti or Rotini
  • 1 Can/Jar Pasta Sauce, 24oz.
  • Bread of choice

Recipe:
  1. Preheat oven to 350 degrees.
  2. Cook 1/2 box of pasta (1/2lb), drain and set aside.
  3. Brown 1/2 lb Ground Beef (I like to add minced garlic, salt, pepper and Italian seasonings, gives the meat a great flavor), drain.
  4. Mix cooked pasta, meat, jar of pasta sauce and 1 and 1/2 cup shredded cheese. Mix well.
  5. Pour into 2.5 quart casserole dish, cover with foil. Bake for 45 minutes.
  6. Uncover, top with remaining 1/2 cup shredded cheese, and bake uncovered for another 10 min, or until cheese is melted and golden brown.
  7. Makes 6 servings. Serve with Texas Toast garlic bread, and if you're feeling feisty, some steamed veggies
