Vanilla Beans (Madagascar or Tahitian)
Funnel sugar into airtight containers. Cut beans down the middle, scrape caviar and mix into sugar. Add beans and secure jars. (Approximately 1 vanilla bean per two cups sugar) I used very large Tahitian beans ( 1 1/2 - 2 beans per jar) . Allow jars to sit for at least a couple of weeks which will allow sugar to infuse with vanilla (a couple of months would be better if time allows). Vanilla beans can then be removed and used for other purposes. Sugar may be used for baking, to flavor drinks and sprinkled over cookies and pies.
To decorate use ribbon, yarn whatever strikes your fancy. Add homemade tags with ingredients and directions if desired.
