Vanilla bean paste



The video above and the recipe and information below are from the website

attempt his recipe this week and will report back.  Thank you Master Pastry Chef for
sharing your recipes.  I highly recommend his website for easy to follow
yet wonderful recipes explained in a way that is not intimidating.  

Vanilla Bean PasteThe quality of Vanilla bean or extract or paste or essence you use can make or break the flavours of your custards cakes and desserts in general.  Alternatively using a quality extract or paste or bean can turn a basic crème anglaise, custard or ice cream
into a triumph. The way I have made my desserts consistently a winner is by
making my own Vanilla bean paste. It costs a fair bit but usually I will make
enough to last about a year so it is quite cost effective considering one bean will
cost around $6 or a 10gm jar of paste is around $10….

The key is by using the whole bean and boiling it and
allowing it to ferment over time your paste will become stronger and
stronger…..In fact the next time you do it you can use the ones from the previous
year and over time you paste is not only unique but potent…..
The most important thing is to use quality Vanilla
Beans…They should be moist and bendy and not dry….You should be able to bend
and twist them and not snap when bent. Contact your local bakery wholesaler or
look online you should be able to find quality beans in bulk quantity…Most
wholesalers are happy to sell you 250gm lots.

*Please note thatI have revised the recipe and increased the sugar and water as compared to the Video…use the recipe below and use the instructions in the video…Result is the same you will just get a little more mileage from the increase in sugar and water…If you followed the video don’t worry it will still taste great.

Juice half lime                                                    $.5
Costing comes to$61.60 depending on how cheap you can get your hands on some Vanilla beans.METHOD

  • Add sugar and water together and slowly bring to
  • the boil
  • Split each Vanilla Bean and scrape out the seeds
  • and add to the boiling syrup
  • Once all are scraped out cut the beans into
  • halves and add to the boiling mixture
  • Squeeze the lime juice into the mixture (this is
  • not for flavour as the acidity stops crystallisation)
  • Boil for five minutes and allow to cool…
  • Funnel into a nice bottle or jar for easy access.

Vanilla Extract December 2012

Finished my 2012 batch of Vanilla Extract this afternoon.  This time stored vanilla in Vodka for nearly 4 months (shake once per day) and put 3-6 vanilla beans in each finished product.  Used super cute bottles and labels.  

I use Gourmet Madagascar Bourbon Vanilla Beans 7~8 Inch.


 and a descent grade vodka.

Makes a great gift and nice for baking baking all year.  I top off my personal stash of vanilla extract with vodka and will continue to do so and add fresh beans as needed for years to come.

Vanilla Extract

Vanilla Beans – 3 per jar
High quality Vodka
Small jars w/tight fitting lids-  i.e: 4 oz Mason Jars
1. For each 4 ounce jar of vanilla extract you would like to make: Slice three vanilla beans down the center careful not to cut through them so that they will release their seeds. Place all 3 vanilla beans into each jar & then fill each jar with Vodka. Don’t quite fill to the top.

2. Place the lids on tightly. Store jars in a dark & cool place. Give the jars a good shake once a week. Vanilla extract will be ready to use in approximately 8 weeks.

as they have continued to take away perks for loyal customers and personnel I avoid the place
like the plague.

Hummm, lets see  frequent shopper program is gone, commissions gone, rumors are that middle management is disappearing, coupons gone, they have pissed off OMM (One million Moms) OMM boycott, taken away commissions, destroyed working environment for hair salon personnel (no commission) + quotas, and free services like once a week free hair cuts for kids (you know the people who come in for FREE haircuts are great tippers ;( ......... )  So long is Johnson is running/ruining the store I won't be back.  Whats to love, the perks are gone for customers, employees compensation cut.... just another miserable place to shop like the big box stores...... no thanks.

Recipe for Fettucini Alfredo


Fettucini Alfredo is an Italian pasta dish made of long, thick noodles with a creamy, cheese sauce on top. Restaurant owner Alfredo Di Lelio created the dish in 1914. Legend has it that Alfredo concocted the dish for his pregnant wife who had lost her appetite. His wife loved the dish, and Alfredo began serving it in his restaurant under the name Fettucini Alfredo. The dish became a hit with Alfredo’s customers, and Fettucini Alfredo spread to the United States. Today, Fettucini Alfredo is considered one of the basic dishes of Italian-American cooking. With a few ingredients and a few basic cooking tools, you can have a Fettucini Alfredo, ready to serve in less than 30 minutes. The recipe below will make four servings of Fettucini Alfredo

  • 1 lb. dried fettuccine
  • 1⁄2 lb. unsalted butter (2 sticks)
  • 1⁄2 lb. finely grated parmesan (about 3 1⁄4 cup)

Directions

  1. Bring a 6-qt. pot of salted water to a boil. Add fettuccine and cook, stirring occasionally, until pasta is al dente, about 8 minutes.
  2. Meanwhile, cut butter into thin pats and transfer to a large, warmed platter. Drain pasta, reserving 3⁄4 cup pasta water, and place the pasta over the butter on the platter.
  3. Sprinkle grated parmesan over the pasta and drizzle with 1⁄4 cup of the reserved pasta water.
  4. Using a large spoon and fork, gently toss the pasta with the butter and cheese, lifting and swirling the noodles and adding more pasta water as necessary. (The pasta water will help create a smooth sauce.) Work in any melted butter and cheese that pools around the edges of the platter. Continue to mix the pasta until the cheese and butter have fully melted and the noodles are coated, about 3 minutes. (For a quicker preparation, bring the reserved 3⁄4 cup pasta water and the butter to a boil in a 12" skillet; then add the pasta, sprinkle with the cheese, and toss with tongs over medium-low heat until the pasta is creamy and coated, about 2 minutes.)
  5. Serve the fettuccine immediately on warmed plates.

Low Calorie Cola Cake





Made this one this weekend.  Apparently you may interchange using cake mix and cola of your choice.  I used Lemon Cake Mix and Sprite and that was it.

1.  Preheat oven to 350 Degrees.
2. Grease 9X13" baking pan/dish.
3.  Combine Cake Mix and Cola in large bowl.  Wish approximately 3 minutes then pour batter into
the baking dish.
4.  Bake for 30-40 minutes.  Test @ 25 minutes & 30 minutes. Allow cake to cool before cutting.
5.  Garnish as desired...... Fruit, Low Fat Cool Whip or Sprinkling of Confectioners Sugar.  Get creative!

Using Duncan mix, Sprite and a dusting of Confections sugar, cutting 20 squares came out to approximately 110 calories!  


Chocolate Vodka Soaked Strawberries










Ingredients:
Chocolate infused Vodka
Strawberries
1 tub Baker's Milk Chocolate Dipping Chocolate


Directions:

Rinse off strawberries.
Marinate strawberries in air tight container with chocolate vodka for at least 24 hours
<-----this is essential!


 Take strawberries out after 24 hours and pat dry. Then dip in chocolate, refrigerate for 15-20 minutes to harden.

25 Ways to Show Your Wife You Love Her


  1. Listen
    To be truly heard is the longing of every human heart, and your wife is no exception. It sounds simple, but listening can be harder than it seems with so many distractions around us and within us.     Unfortunately, men are notoriously selfish in the bedroom, yet are dumbfounded when their wives are less than enthusiastic in this arena. Make this area of your relationship as pleasurable for her as it is for you and it will pay huge dividends. It may mean washing the dishes or helping with the kids, so that she has energy left at the end of the day. Speak to your wife in the same way that you would speak to a respected colleague.     Give weight to what your husband thinks is important. Make those things a priority that matter most to him, whether it’s having dinner ready when he gets home from work or keeping the house tidy or limiting computer time. Don’t make him ask twice. (Philippians 2:4)
  3. Give Him Your Undivided Attention
    Yes, I know that women are masters of multi-tasking, but when your husband is speaking to you, make a point to lay other tasks aside, look into his eyes, and listen to what he is saying with the goal of understanding and remembering his words.
  4. Don’t Interrupt
    Have you ever been around a person who won’t let you finish a sentence? That gets old fast. Even if you think you already know what your husband is going to say, allowing him to say it without cutting him off mid-sentence shows both respect and common courtesy.
  5. Emphasize His Good Points
    Sure, he has his faults (as do you), but dwelling on them will only make you (both) miserable. Choose instead to focus on those qualities in your husband that you most admire. (Philippians 4:8)
  6. Pray for Him
    Ruth Graham advises wives to “tell your mate the positive, and tell God the negative.” Take your concerns to God. Faithfully lift up your husband in prayer every day, and you will likely notice a transformation not only in him, but in yourself, as well. (Philipians 4:6-7; 1 Thessalonians 5:17)
  7. Don’t Nag
    Your husband is a grown man, so don’t treat him like a two-year-old. Leave room for God to work. You are not the Holy Spirit, so do not try to do His job.
  8. Be Thankful
    Cultivate an attitude of gratitude. Don’t take your husband for granted. Be appreciative for everything he does for you, whether big or small. Always say thank you. (1 Thessalonians 5:18; Ephesians 5:20)
  9. Smile at Him
    Smiles spread happiness. Smiles have even been shown to create happiness. Smiles are contagious. And a smile makes any woman more beautiful.
  10. Respond Physically
    Did you know that the way you respond (or don’t respond) to your husband’s romantic overtures has a profound effect on his self-confidence? Don’t slap him away when he tries to hug you or make excuses when he’s in the mood. Your enthusiastic cooperation and reciprocation will not only assure him of your love, but will make him feel well-respected, too. (1 Corinthians 7:3-5)
  11. Eyes Only for Him
    Don’t compare your husband unfavorably to other men, real or imaginary. It is neither fair nor respectful and will only breed trouble and discontent. Avoid watching movies or reading books that might cause you to stumble in this area, as well. (Psalm 19:14; Proverbs 4:23)
  12. Kiss Him Goodbye
    I once read about a study done in Germany which found that men whose wives kissed them goodbye every morning were more successful than those who weren’t kissed. Success and respect often go hand-in-hand, so be sure to send him off right, and don’t forget to greet him with a kiss when he returns home, for good measure. (2 Corinthians 13:12)
  13. Prepare His Favorite Foods
    Although the rest of the family is not overly-fond of spaghetti, my husband loves it, so I try to make it at least two or three times a month as a way to honor him. Next time you’re planning meals, give special consideration to your husband’s preferences. (Proverbs 31:14-15)
  14. Cherish Togetherness
    I love to sit near my husband, whether at home or away. Our church shares potluck dinners every Sunday afternoon, and although the men and women normally sit separately to visit, I like to position myself close enough to my husband that I can listen to the conversation, as I think everything he says is so interesting. At home, I’ll take my book or handwork to whatever room in the house he’s working in, just to be close to him, because I enjoy his company, even when neither of us is talking.
  15. Don’t Complain
    Nobody wants to be around a whiner or complainer. It is grating on the nerves. Remember the serenity prayer: accept the things you can’t change, courageously change the things you can, seek wisdom to know the difference. (Philippians 2:14)
  16. Resist the Urge to Correct
    I know one wife whose spouse can’t tell a story without her stopping him fifteen times to correct inconsequential details: “It wasn’t Monday evening, it was Monday afternoon…. It wasn’t blue, it was turquoise…. He didn’t ride the bus, he took a shuttle.” Please. Please. Please. Don’t ever do that to your husband — or to anyone else, for that matter! (Proverbs 17:28)
  17. Dress to Please Him
    Take care of your appearance. Choose clothes your husband finds flattering, both in public and around the house.
  18. Keep the House Tidy
    To the best of your abilities, try to maintain a clean and orderly home. Seek to make it a haven of rest for your entire family. (Proverbs 31:27)
  19. Be Content
    Do not pressure your husband to keep up with the Jonses. Take satisfaction in the lifestyle he is able to provide for you. (1 Timothy 6:6-10; Hebrews 13:5)
  20. Take His Advice
    Do not dismiss his opinions lightly, especially when you’ve asked for his counsel in the first place. Make every effort to follow your husband’s advice.
  21. Admire Him
    Voiced compliments and heartfelt praise are always welcome, but you should also make it your habit to just look at your husband in a respectful, appreciative way. Think kind thoughts toward him. He’ll be able to see the admiration in your eyes. (Luke 6:45)
  22. Protect His Name
    Honor your husband in the way you speak of him to family and friends. Guard his reputation and do not let minor disagreements at home cause you to speak ill of him in public. Live in such a way that it will be obvious to others why your husband married you in the first place. (Proverbs 12:4; 22:1)
  23. Forgive His Shortcomings
    In the words of Ruth Bell Graham, “A happy marriage is the union of two good forgivers.” Please do not hold grudges against your husband. Do not allow a root of bitterness or resentment find a home in your heart. Forgive your husband freely, as Christ has forgiven you. (Mark 11:25; Matthew 18:21-35)
  24. Don’t Argue
    You are not always right, and you do not always have to have the last word. Be the first to say, “I’m sorry.” Be willing to accept the blame. It takes two to argue, so “abandon a quarrel before it breaks out.” (Proverbs 17:14; 21:19; 25:24)
  25. Follow His Lead
    If you want your husband to lead, you must be willing to follow. Neither a body nor a family can function well with two heads. Learn to defer to your husband’s wishes and let final decisions rest with him. (Ephesians 5:22-24)

Homemade Raspberry Pie Recipe





Raspberry Pie Recipe   (This recipe is originally from my husband's grandmother)

Crust:

Cut 4 Cups of flour with 2 1/2 cups of shortening.  Once flour and shortening are cut together, add 2 teaspoons vinegar.  Crack one egg into a cup measure and fill the remainder of the cup with water.  Mix the water/egg mixture with flour/shortening mixture.  Refrigerate overnight.  Roll dough out with flour to make crust.

Filling:

Fill pie dish with raspberries mounding slightly over filling the dish to measure.  Put berries into bowl.  Add one cup of sugar.  Add 4 tablespoons of flour.  Mix and set aside.

Finish:

Place the crust in the pie dish and fill with raspberry mixture.  Cover with crust and sprinkle sugar on top. Used heart shaped cutter to make little hearts.

Put the pie dish on the baking sheet to catch spillover.  Bake @ 400 degrees for 10 minutes.  Turn oven down to 350 and cook approximately 30 minutes (keep an eye on it during this time.)
