Homemade Vanilla Extract: Final Product


Gave the 6 oz. bottles as Christmas Gifts.  Just finished our bottle (first photograph) tonight.  Will start a new batch this weekend.  Used it in my homemade Chess Pie for dinner with my husband's Dad and step-Mom.  It was a big hit and she said it was "perfect" ~~ ;)


2 bottles Vodka  (I am using Smirnoff vodka) 30% proof or less, cost = $28.51

Vanilla Beans   1/2 LB Gourmet A Madagascar Bourbon Vanilla Beans 6-7"  )  Extract grade or better vanilla beans  (I purchased gourmet....see link above) Cost = $26.99 plus shipping
*** Note 1/4 LB. would have been sufficient, reseal for later use (think vanilla sugar)

6 Vanilla Beans for every two cups Vodka;  poured  approximately 3/4 from each bottle (and poured into sterile Mason jar) to make room for vanilla beans. Cut  vanilla beans long way leaving approximately an inch and insert into bottles, so that vanilla beans remains intact. Open to expose caviar. At minimum, allow two months for extract to develop in a cool dark place, over time, the richer the color the stronger the extract. Shake vigorously day 1 and then give it a little shake every 1-3 days. 

After a couple of months extract should have rich beautiful color and be ready to use, however, if time allows mixture may sit a few more weeks ~ ~ months.  At this time you may strain it into small bottles for gifts.  You may put a vanilla bean in each bottle so that the extract will keep gaining in flavor and you may top off your extract periodically w/vodka to replenish.
